For my bridal shower, my mom did the sweetest thing. Knowing how important family traditions are to me, she had everyone bring recipe cards from their own kitchen! Let me tell you, it’s been (almost) five years and I still use them! I thought it was an even sweeter gesture for Grandma Penny to share with me Matthew’s most favorite recipe…her Beef Stew. I couldn’t wait to make it and was so excited to serve it to him, only for him to say “I mean it’s good, but it’s not Grandma’s.”
Wow. What a blow in your first few months of marriage. I even tried making it again, only for the same, honest answer. I finally thought to myself, when Grandma gets here, I’m going to ask her secret. And here it is: she didn’t write down all of the ingredients!!! I think it was her secret way of staying Matt’s favorite haha. Since then, I haven’t got it “perfect,” but I really don’t think I will ever get to Grandma’s level. Here is the recipe, as absolutely close as I can get!
Gather the ingredients:
- 2lb Roast
- 4 Potatoes
- 1 bag Baby Carrots
- 1 Yellow Onion
- 1 Can French Onion Soup
- 1 Can Golden Mushroom Soup
- 1 Packer Dry Onion Soup
We’re making this in the crockpot, so directions are simple!
1. Cut potatoes into 1 inch cubes. Cut onions in 1 inch slices.
2. Put in the crockpot: Roast, Onion Mix, Soup, Carrots, Onion (not pictured because my husband forgot to buy them), Potatoes
3. Cook on high 3-4 hours or low 6-8 hours
