Since doing the Whole 30 last May, cauliflower rice has become a staple in my diet. Just check out this graphic from Dr. Axe:
Plus, it make a yummy, low calorie alternative to regular rice, couscous, potatoes, pasta, or whatever other carb you use to fill your plate (and stomach).
Here’s the simple run down:
1. Cut into florets
2. Blend in blender (about 1 min)
3. When cauliflower resembles rice, it’s ready to cook (or it can be eaten “raw”)
4. Put a 1 tbsp of olive oil in pan. Stir in “rice,” 1 tsp salt and a dash of pepper. Cook over medium heat. I cook until the cauliflower is just starting to get brown.
5. Serve with your favorite protein and veggie! We even use it in our Mexican rice bowl.
