Let me just start by saying my Grandma Viv makes THE best soups.My two favorites are her Turkey-Noodle Soup (that she makes using turkeys fresh from the woods, that we hunted together) and her POTATO SOUP! A recent hospital visit scared me, not just for the health of my grandma, but the fact that she gave me her potato soup recipe a couple months prior and I DID NOT write it down! So I called Grandma Viv up…it happened to be her first day in months that she was allowed to go home for a couple hours before heading back to assisted living center. The trick to her soup is the seasonings..
Use:
2-2lb. containers Chicken Broth
2- 1lb packages Chunked Ham
1 Purple Onion
1 Bunch Celery
10 Yellow Potatoes
Seasonings: Garlic Salt, Pepper, Salt, Dill Weed, Parsley, Oregano, Thyme, Rosemary
Combine all ingredients in large pot on stove. Season to taste…if (maybe I should say when) I ever figure out the exact amount of seasonings to make the perfect batch of soup, I will update you! But, the more the better, like damn near 1 tablespoon of each. Bring to boil and let boil for 10-15 minutes so potatoes cook a little. Simmer on low until ready to serve.
