Dill+Thyme+Mesclun

Let me just say I feel like I hit the jackpot when I realized you could put HERBS in your salad! My parents were in town and helped me install 3 raised-bed gardens, plus two pallets worth of herbs and veggies! I had no idea what to do with all those herbs, but my mom made up the best salad ever, recipe below…

I used Mesclun lettuce as a base, mixed in Raspberries, Blueberries, Blackberries, chunked Pears, slivered Almonds, Pumpkin Seeds, Flax Seeds, chopped Sweet Onion, chopped Dill, and chopped Thyme. Topped with seasoned Salmon and dressing.

You can use any dressing, but we had some leftover Brianna’s Poppy Seed Dressing. Just be cautioned…although it is considered vegan and doesn’t have any trans fat, sugar is the second ingredient! Even through the sweet dressing, the dill and thyme are definitely the stars! Thyme gives it a savory flavor and the dill has me wanting more! I will probably be putting dill in all my salads, now.
