One of my favorite recipes is a Mexican bowl! You can load yours up with your favorite vegetables and proteins. With limited cheese and by eliminating the tortilla or chips, this is definitely my go-to for healthy mexican. šš»šš»
- 1.5 pounds chicken breast
- 1 packet taco seasoning
- Red hot (to taste)
- 2-3 cups lettuce
- 1.5 cups dry rice
- Cheese (to taste)
- 2-3 Avocado
- Can of Olives
- Garnish with Rainbow Microgreens
- Cook rice as directed.
- Cook chicken breast, season with taco seasoning and red hot. Shred chicken with fork while cooking.
- Assemble bowl by layering lettuce, rice and meat, then topping with your favorite Mexican toppings! For today’s bowl I used cheese, avocado and olives. If you really wanna jazz it up, try corn, peppers, onion, beans, salsa or guacamole!
