Healthy Mexican Bowl

One of my favorite recipes is a Mexican bowl! You can load yours up with your favorite vegetables and proteins. With limited cheese and by eliminating the tortilla or chips, this is definitely my go-to for healthy mexican. šŸ’ƒšŸ»šŸ’ƒšŸ»

  • 1.5 pounds chicken breast
  • 1 packet taco seasoning
  • Red hot (to taste)
  • 2-3 cups lettuce
  • 1.5 cups dry rice
  • Cheese (to taste)
  • 2-3 Avocado
  • Can of Olives
  • Garnish with Rainbow Microgreens
  1. Cook rice as directed. 
  2. Cook chicken breast, season with taco seasoning and red hot. Shred chicken with fork while cooking. 
  3. Assemble bowl by layering lettuce, rice and meat, then topping with your favorite Mexican toppings! For today’s bowl I used cheese, avocado and olives. If you really wanna jazz it up, try corn, peppers, onion, beans, salsa or guacamole!
